Post doctoral research fellowship opportunity:


Microscopist to investigate the influence of cheese matrix
microstructure on localised cheese physico-chemical parameters and on
starter cell metabolic activity during cheese ripening


A post doctoral research fellowship is offered for 2 years at the
Teagasc Food Research Centre, Moorepark to investigate the influence of
variations in cheese matrix microstructure on localised physico-chemical
parameters and, as part of an extended research team, on the influence
on starter cell metabolic activity in cheese. The successful candidate
will be responsible for the development and application of new
microscopic techniques to observe variations in cheese microstructure,
to investigate factors influencing cheese physico-chemistry such as
ionic concentrations within the aqueous phase and in investigating
dispersion patterns of Milk Fat Globular Membrane components within the
curd matrix.

The cheese curd matrix is a complex system with current knowledge gaps
concerning the relationship between cheese microstructure and cheese
quality, consistency and ripening profiles. Recent advances in
analytical techniques particularly in the field of microstructure,
microscopy and flow cell cytometry now offers the opportunity to gain a
deeper understanding of the relationships between changes in cheese
microstructure and cheese physico-chemistry and metabolic activity.
Cheese is targeted as a vital end product for processing of the
projected 2 .75 billion litre increase in Irish milk production arising
from abolition of milk quotas in 2015 with cheese production projected
to grow from 180,000 tonnes in 2011 to 215,000 tonnes p.a. by 2020.

The successful candidate will be a key member of a research team and as
well as undertaking development and application of new microscopic
techniques will also assist with supervision of PhD projects, will
prepare papers for peer reviewed journals, and will be involved in
provision of scientific advice to commercial projects. The successful
candidate should have a strong knowledge of microscopic techniques such
as Confocal Scanning Laser Microscopy (CSLM) and/or Scanning Electron
Microscopy (SEM) and knowledge of food matrices would be an advantage.
