Hello,

I have been studying food science as a main subject at the Technical
University of Munich since 2006 and I’m searching for special fluorescent dyes/
fluorescently labeled antibodies or other possibility in order to stain amylose
and amylopectin in starch and/or cereal-based products for my diploma thesis.
I am concerned about being able to stain both amylose and amylopectin
individually (by this I mean that both should be coloured differently, so that I
can distinguish the two in the sample) under the CLSM.
Does anyone have any experience with this topic?

I can tell you that amylose gives a very strong second harmonic signal, which could be useful.  Reputedly amylopectin less so - there may therefore be a difference you could exploit there.
