FWIW, I think much of the dichotomy here is because of what we think the data is.
It's neither a true representation of the image, due to quantization and noise,
nor it it an image of the sensor, particularly as there are blind 'frames' around every sensor cell, there's no guarantee that any bright or dark spot is central in a sensor cell, or indeed missed completely because of those blind frames.
The data is what the sensor 'thinks' it sees. It isn't quite right, but it's the best the sensor can do (per image, anyway).
Any reprocessing loses data.
If the data you lose are artifacts like noise or harmonics due to the sampling, that's probably fine.
If the data you lose are part of the image, that's not so good.
Unless there's a very strong reason to do otherwise, keep the original data, unadulterated, warts and all. You can always reprocess it again.
