A number of years ago when I was in Wisconsin we used 2p and 3p imaging of triglyceride crystals in butter.  There was a difference between winter butter and summer butter!

Multiphoton is just fluorescence with a fancy laser.  If you can do it with
fluorescence, you can do it with multiphoton.  The reason to go with multi
is the IR pulse laser penetrates better and is tunable.  I'd check up on
general fluorescence microscopy applications and work back from there!

You left out an additional reason to use multiphoton:  microcooking!

We've been very successful searing liver when trying to image it.

If you count SHG in with multiphoton then it has a lot of application in food science since it reveals the crystalline state of starch.  One of our users is currently studying different wheat varieties.  Also useful for bread, pasta, etc!

Multiphoton is just fluorescence with a fancy laser.  If you can do it with fluorescence, you can do it with multiphoton.  The reason to go with multi is the IR pulse laser penetrates better and is tunable.  I'd check up on general fluorescence microscopy applications and work back from there!

If you count SHG in with multiphoton then it has a lot of application in food science since it reveals the crystalline state of starch.  One of our users is currently studying different wheat varieties.  Also useful for bread, pasta, etc!

 Some years ago I used my 2P butter but I had to do that cool the microscope
black boxe.

There is so much more to multiphoton than just 2P-excited fluorescence!

As Guy already mentioned, starch granules work great with SHG, we once
did that on potatoes sliced with a microtome :-) Cellulose also should
give a SHG signal, but we didn't test that.

THG will give you nice patterns on fat droplets in water, e.g. condensed
milk (or sunscreen, but that's not food, then) and I would assume that
the same would happen with CARS but that we don't have.

If I were to speculate, I would guess that you probably find some
relation of the SHG pattern caused by muscle-myosin and the age of meat
- but that is just that, a speculation.

Cellulose does give an SHG signal, but much weaker than starch.  The reason is simple chemistry - the different linkages between the glucose residues.  I can't immediately think of a food use.  I agree about actin / myosin.  Also collagen SHG imaging should be able to tell you how tough your steak will be!

We use confocale microscopy to study food microstructure.
We deal with dairy products (cheese and milk).
